Classic Cobb Salad with Homemade Vinaigrette Dressing

Ingredients
For the Dressing:
2/3colive oilextra virgin
1/3cwhite wine vinegar
1clovegarlicfinely chopped
1/2tWorcestershire sauce
1/2 tdry mustard
1/2 tpaprika
1/2tsugar
1/2tsalt
1/4 pepper
For the Salad:
8ciceburg lettucetorn into bite sized pieces
2 1/2cescaroletorn into bite sized pieces
1 1/2cwatercresstorn into bite sized pieces
1 3/4ctomatoeschopped
2 1/2cchicken breastchopped
2eggshard boiled and chopped
2/3cblue cheesecrumbles
1cgreen pepperdiced
2Tchiveschopped
Instructions
For the Dressing:
Combine all dressing ingredients in a jar with a tight fitting lid. Shake vigorously until blended. Refrigerate dressing.
For the Salad:
Combine Lettuce, escarole and watercress. Line a large platter or bowl with the mixed greens. Arrange the remaining ingredients on top of the greens.
Just before serving, pour dressing over greens and toss. You may not want to use all of the dressing.
Notes
If escarole or watercress isn't available, choose two of your favorite greens. May also add avocado if available. I think 2 cups green pepper is too much, so you may want to cut back.
